  • Good Eatin'

    I want to be a good mom, and a good homemaker and all that stuff.  So one of the things I notice sometimes is that I've fallen into a rut, cooking the same things over and over.  In an attempt to put some variety in our lives, tonight I changed things up a bit.  We had baked fish, english peas, and hominy casserole. 

    Tucker wasn't too sure about the hominy casserole.  I tried to interest him by telling him that hominy is a Native American food.  Usually that's enough to get him to at least try it. 

    Tonight he looked at me disbelieving.  "Mom, In a casserole?!? Native American's didn't have chips, cheese, or anything that came from a can." 

    Hominy Casserole

    2 cans of hominy
    1 can cr of mushroom soup
    1 can mushroom pieces and stems
    1 can rotel tomato/chile blend
    Velveeta Mexican Cheese
    Crunched up Fritos

    mix up first three in casserole dish, top w tomatoes, then slices of cheese, and finally crunched up fritos - bake at 350 until cheese is melted and bubbly (or until you get tired of waiting)

  • Um...don't like hominy...but I"m guessing it could be substituted?!?

  • I looked up Hominy as I didn't know what it was....

    Well, good!..now, why are the peas engish?

  • Tucker is getting too smart.    Feed him spaghetti squash tonight--yummmm--gotta love that Native American spaghetti squash.   

  • At a party this weekend we had cheese grits. I know it has nothing to do with native american but there was a young girl from Ohio there who had never had them. I told her to try them so she took a spoonful and a small one at that. Later she told me she didn't like them. I said everybody like cheese grits (which is surely not true). Later she came to apologize to me for saying she didn't like them saying I should have told you I liked them. I said NO you told me the truth and I can live with that! Cheers

  • That sounds pretty good except for the garden slugs...er...I mean mushrooms.

  • I love grits, but I don't know why I don't care for hominy so much.  This sure sounds delish though.  I am a member of the email Better Homes & Garden monthly recipe club.  Just once a month, they send you 3 recipes, but there are links where you can get to lots more.   You are a good mom.
